In this class, cake artist and experienced tutor, Marianne Stewart, will take you through the essentials to making these beautiful on-trend flowers.
Wafer paper flowers offer a wonderful contemporary alternative to sugar flowers, are quicker to make and withstand humidity, so are perfect for decorating iced and buttercream cakes. In addition, they are 100% vegan-friendly, so make a great alternative to sugar flowers that are frequently made with non-vegan/vegetarian flower paste.
In this class you will learn how to create three different wafer paper flower designs, from a simple stylised paper rose to more complex ranunculus and peony. We will cover how to cut petals by hand using templates, as well as how to use piping gel and other materials to shape them into realistic finishes. You will dust your flowers to your individual taste and learn how to arrange them onto your decorated dummy
In class you will:
Create a simple stylised paper rose
Create a medium-sized ranunculus
Create a large frilly peony
Learn how to dust wafer paper flowers for an effective finish
Learn how to cover a dummy directly with wafer paper for a fast decorative effect
Learn how to arrange the flowers professionally onto a cake
Marianne has been working as a pastry chef, cake decorator and tutor for over 10 years. She trained in Royal Icing with the undisputed master of Royal Icing himself, Eddie Spence MBE, for 4 terms at Eastleigh college. She has since used her royal icing skills to create a royal-iced gingerbread village for the Neff “Slide n Glide” oven campaign, a sugar crown for a magazine shoot with Prue Leith, as well as creating royal iced cookies for the cake decorating book Cakemoji. She has taught hundreds of cookie decorating classes around the UK, and is a huge royal icing enthusiast!
This course aims to be a fun source of creativity for novices and seasoned sugarcrafters alike so we don’t put limits on abilities – we just want you to bring a cake load of enthusiasm!
This course is held at LetThemSeeCake Shop and Classroom (entrance on Lansdowne Road). Public on-street car parking is available nearby but we cannot guarantee a parking space. There is a bus stop outside the Bakery, reachable by bus numbers 13, 17, 18, 64, X1 from Cardiff city centre.
The course price includes all baking ingredients, materials, recipe and icing handouts to take home, all sugarcraft tools, equipment, refreshments will be supplied.

The venue reserves the right to cancel or change the date of the course without notice, however as much contact will be sought with attendees and alternative dates will be found in this unlikely event.
Please make us aware of any special dietary requirements for refreshments at time of booking, note we use Wheat flour and Gluten is present throughout the bakery building.
Payment & Cancellation - Full payment is required at time of booking. Cancellation for any reason must be made at least 14 days prior to the course date for a full refund. A 50% refund can be obtained up until 7 days prior to the course date. For cancellations made within 7 days of the course date a single date transfer will be offered, but no refund will be available. Transfers must be used within 6 months of the original course date.
